Part 1

I'm making a 2 part meal for lunch this week.

I think I've made these Sweet Potato Chips before, but I guess I forgot.

You'll need:
1 pd sweet potatoes
1/2 tsp sugar
3/4 tsp salt
bowl of cold water


First, peel your potato. For some reason a scene from My Big Fat Greek Wedding is playing in my mind. Do you know which one I'm talking about?


I chopped them in half because it's easier to handle.


Get your cold water ready and add the sugar.


And 1/4 tsp of the salt (you'll use the rest to salt the chips when they are done)


Start chopping up your sweet potatoes. They thinner the slices the better.


Then put all the slices in the water mixture for 30 minutes.


Take them out of the water and pat 'em dry!


Get 2 baking sheets out and spray them with cooking spray. In one layer, spread out the chips.


In a 350 degree oven, bake them for 40 minutes. Taking them out and flipping them about every 5 minutes.

Be sure to pay attention to your children....or your feline children :)


Once they are done cooking, salt 'em up!


And you're done!

Or 118 calories (makes 4 servings)

They aren't the best, but I guess it's a good alternative from regular potato chips.

  1. Maybe either some paprika and garlic or cinnamon sugar could help yummy them up. The paprika and garlic definitely wouldn't add any points -- I've done this as fries and it's totally yummy!
