Mrs. Wilson or Mrs. Betty Crocker?

It's been a busy day in the kitchen!

My first quest was to make Halloween candy. It's a tradition on my mom's side of the family. I can remember getting homemade candy for almost every major holiday; easter being my favorite!

Sadly, I don't have any children yet, but I still wanted to make candy. So I made some for my co-workers.

Of course the hardest part is waiting for the chocolate to melt!


But the finished product is worth the wait!


Onto other things! I'm still challenging myself to make something each week from my Weight Watchers book. I really wasn't a huge fan of the chili I made this week, so I had to make a better choice this week. 

This week's choice- Chicken Pita Pizza's. But let me say, I did need to make a few adjustments to the recipe. It called for sun dried tomatoes, not in oil. Now, I found the sun dried tomatoes, but I couldn't find any not in oil. I even looked in several places. After I decided that it doesn't exist in the Chester, VA area, I gave up and decided it was too expensive anyway. So I substituted it with roasted red peppers. Just as yummy, I think. 

It was pretty easy. I started out with putting the whole wheat pita down, added some tomato sauce and grilled chicken. 


Then you add the rest. The roasted red peppers, chopped arugula and mozzarella cheese. 


The cookbook said to bake it for 10-12 mins, but I thought was a bit too long. 9 mins. seemed to do the trick! I haven't tried yet, but it's in my lunch box for tomorrow!


It's making me hungry already!

New Things

There are a few new things/ideas at the Wilson residence.

First, welcome our new addition, Tony Montana (Brian's name pick, not mine)!

We've been wanting a new kitty for a while now. I wanted Brian to pick out the kitty, since Ellie is really  my kitty. He picked him and picked the name! B love scarface....hence the name.

Other new thoughts, I'm going to try to cook something from my Weight Watchers cookbook each sunday and eat that during the week for lunch. Since getting married and falling into the later part of my 20's, losing weight and keeping it off is a bit more challenging! Brian turns his nose up to the idea of cooking from Weight Watchers, so I'm doing it for myself in hopes he might try some and like it....hope being the key word!

The first adventure was making Chicken Chili.

I started by chopping up red and orange peppers (Walmart didn't have any yellow for some reason).

Then you add the chicken. The crushed tomatoes and chickpeas are for later.


Then it's time for the spices! I realized as I started that I didn't have ground cumin, sad, but I just added more chili powder. 


Here's the end result! I'd give it about a 2.5 out of 5....just 'cause I'm not a huge chili fan. I'd probably give it a 3.5 if I liked chili more...

iPhone

So, the iPhone 4 & 4s came out on Sprint! About time Sprint gets with the times!

I've been bugging the husband to switch to the plan that I share with my sister and her husband. It's going to save us about $60-70 a month. So, as soon as they announced they would have the iPhone, the husband was a little more motivated!

For the last week or so he's been gloating that he's going to have the new iPhone and it's going to drive me crazy (which it would a bit). But, my phone plan is up for a renewal in a few months, so I can wait.

Around Thursday or so, the husband confessed that he's been giving me a hard time about the phone and that he really planned on giving it to me and he'd take my old phone.

So, I got the iPhone :)

Yes, I have the best husband :) Not just because he buys me things, but because he's thoughtful and loves me unconditionally

Why am I awake?

Why am I awake at 6-something in the morning on a weekend??

That's because I had to wake up and make the hubbies lunch. The poor guy has been working for 3 weeks straight now. Most days 12 hours a day. Although we really need the money to pay bills, I wish he didn't have to work so hard.

Since B has been working so much and we're not sure when it's going to stop, we had to cancel our post-wedding photos. I'm super bummed about that, but Emily said she would graciously take pictures for us when he's finally off on a weekend. Hopefully we can catch the beautiful fall weather!

Speaking of the fall- I put out all my Halloween decorations last weekend. As B was looking around at the decor, he noticed that I had a cute Halloween oven mitt. He then says to me, "So is Halloween the only time we can have an oven mitt?" Because we don't have any regular oven mitts. It was funny, probably only in the moment. lol.

Anywho. I'm off to go check out the church that Emily and Sean go to. Maybe it'll be a good fit for B and I once he's no longer working on the weekends!!! And we are doing the Making Strides walk this afternoon as well. I still miss the Race for the Cure Little Rock, that was the best one I've ever been involved in.

Did I just say that I miss Little Rock?

7 days a week

The poor hubby is work 7 days a week. 6 - 10 hour days and 8 hours on Sunday. He's exhausted and still has at least 3 more weeks of this to go. But we do like the extra cash ;)

However, it puts a wrench into going to church. We've been struggling for a while with deciding what to do about church. We've been going off and on to the church that he kinda grew up in and his mom goes to it as well. But we really decided that it's not for us. So we were going to start to try to find a new church and then all this overtime started in. So, I haven't been going since he's working. Lame excuse, but I know he doesn't want me going to look for a new church without him.

So I'm improvising.

Last night my eye caught a book on my shelf The Purpose Driven Life. I started it a long time ago and never finished it. So, I'm starting over and using that as my devotional time. I'll probably do it a few times a week (I hope) and most importantly on Sundays.

Today's question at the end was, "In spite of all the advertising around me, how can I remind myself that life is really about living for God, not myself?"

This week, I'm going to try to keep that in the back of my mind.

A Lovey-Dovey Post

We're almost at the 3 and a 1/2 month mark!

When we got married, it was in a flash and things weren't exactly in place. We both still had roommates and it took a while for "the two to become one".

I'm not sure if it's that we are finally settling into a nice routine and married life is setting in; but falling in love with your husband more and more every day is the best thing!

I am blessed to have an amazing husband!

(Note to self: read this when Brian does something that makes you mad) lol.

Helicopters

You have to remind yourself sometimes that your husband is  boy. Men, at times, are very different from women. Well, more then "at times".

Brian doesn't indulge in things he wants very often, but when he really wants something, I try my best to get it for him.

This past thing was a remote control helicopter.

So, we went on the trip to Best Buy, after much research on his part, of course. We make a loop around the store. No helicopter in sight. We are mid-loop for the 2nd time when I ask if he wants some help. Of course, him being a man, he says no. So, I do it.

We never would have found it. It was up by the registers. Needless to say, he got his toy.

I'm not sure I love the helicopter so much. But it only last 7 minutes. Then he needs to power up again.

I guess 7 minutes of interrupting my tv show isn't so bad for a bit of enjoyment for him.

He deserves it.
